JESSICA QUINN

CO-OWNER/ EXECUTIVE PASTRY CHEF

Jessica Quinn is the Co-Owner and Executive Pastry Chef of Dacha 46. A graduate of NGI in NYC and with over fifteen years of experience working as a pastry chef, Jessica has worked at Brooklyn institution Poppy’s Catering, food styled for various cookbook and editorial projects, created the pastry program for Bon Appetit best new restaurant Agi’s Counter and was the opening pastry chef of Michelin star restaurant Rezdora in NYC. Jessica is a Food Network Chopped Champion.
Being first generation Jewish Latvian Ukrainian and spending her childhood around her babushkas tables on Brighton Beach, Jessica’s love for old world classic Eastern European pastry has remained with her throughout her career. After years of working in traditional Italian and French kitchens she saw that there was a missed opportunity in the lacking presence of the incredible desserts she grew up eating. Jessica’s elaborate multilayer cakes garner lines around the block, proving that Eastern European pastry deserves a space beside some of the best regarded bakeries and patisseries.

TRINA QUINN

CO-OWNER/ EXECUTIVE CHEF

Trina Quinn if the Co-Owner and Executive Chef of Dacha 46. With over eighteen years of experience working in the restaurant industry and hailing from several notable restaurants such as former NYC favorite Pure Food & Wine and her most recent position as the former Sous Chef of Red Hook Tavern. Trina’s years of helming various and diverse kitchens has helped her cultivate strong and professional teams. One of her many strong suits in the kitchen outside of cooking is being able to provide strong leadership, offer a hands-on supportive teaching environment and help inspire the people she works with to take pride in their craft.

Trina grew up in upstate NY in The Finger lakes which provided her with her first love of minimalist cooking. Focusing on the quality of ingredients and where they come from has fostered a refined and restrained cooking style that lets her craft shine and produce be showcased. Trina’s focus is working with small artisans and local purveyors within the community to ensure longevity while harnessing her passion for seasonal & sustainable bounty. As an adoptee of Eastern European Culture and cuisine she continues to generate an ever growing following for Dacha 46 with her approachable interpretation of classic dishes with creativity & respect.
